The elaboration of CARDIO is done giving special importance to the extraction of phenolic compounds from the grape to the must. The combination of a selection of grape varieties with high phenolic content, the cultivation of them under water stress and a maceration with specific enzymes allows to obtain wines with high phenolic content.
